Egg & Bacon Breakfast Pizza

Good morning, what are you eating for breakfast today? 

I don’t know about all of you but I get bored of the same breakfast every day. Most days, I call breakfast a cup of coffee, piece of toast, or a pot of yogurt on the go. Don’t get me wrong I love breakfast. It’s actually one of my favorite meals of the day just not during the week when I am busy. I love getting up on the weekend and making a special family breakfast that we can have all together at the table. I want my kids to grow up remember my weekend breakfasts as special family time. 

I actually prefer breakfast for dinner. When I was in college and living on my own I used to eat breakfast for dinner all the time. Scrambles eggs were a frequent to my dinner table. I was too lazy to cook a full meal for one and who doesn’t love a good bowl of cereal at night too? It’s fast, easy and fills me up. I still do it when the kids are asleep and Mr P is out of town. Another favorite breakfast for dinner or the weekend for us are crepes. I am notorious for whipping up a batch of homemade crepes on a whim.  Now, I get to add egg & bacon breakfast pizza to my list. Egg & Bacon Breakfast Pizza RecipeI love being in my momma’s kitchen here in the states baking up a storm. It’s also great to have more people testing out my creations than I do at home. I think my neighbors have far given up on me as guinea pigs. Even the office staff at my husband company has had their fill. My parents are welcoming it with open arms for the summer. My Dad said this was fantastic but he would have liked some onions in it. So I take that on board and my mom preferred the eggs runny and I think I liked it a little more overcooked for a soft egg yolk. I was surprised at how much MM loved this pizza as she hates normal pizza. I think I have put it down to no tomato sauce on this pizza like normal pizza. She loved the cottage cheese creaminess of this style pizza. Sadly, B couldn’t try it as he is allergic to eggs but we made him a little bacon one too that he gobbled up. Egg & Bacon Breakfast Pizza

Ingredients

  • 1 package 13.8 oz Pillsbury pizza crust
  • 6 slices crispy cooked bacon diced
  • 2 cup mozzarella cheese grated
  • 1/4 cup parmesan cheese
  • 6 eggs
  • 1/2 green bell pepper diced
  • 1/4 tsp red chilli flakes
  • 1/4 tsp dried oregano
  • 2 Tbsp olive oil
  • 1/2 cup cottage cheese
  • 3 Tbsp diced chives
  • salt & pepper

Instructions

  1. Preheat oven 500 degrees F
  2. Roll out your pizza dough and in lightly greased rectangle cookie sheet fill bottom of pan with your dough
  3. In a small bowl, mix mozzarella and parmesan cheese; set aside
  4. In separate bowl, mix cottage cheese, oregano, dash pepper and salt
  5. Brush edge of pizza with oil
  6. Spread cottage cheese mix evenly over top, leaving about an inch on the edge
  7. Layer bacon, mozzarella cheese mix, green peppers and red chilli flakes
  8. Create three equal size wells in the toppings, in two rows for your six eggs
  9. Crack on egg into each well and salt and pepper
  10. Bake pizza until crust is golden brown about 8 minutes for runny yolks and 10 minutes for soft-cooked yolks
  11. Set aside, and let cool
  12. Add diced chives on top to serve

Recipe Notes

If you like onions in your breakfast why not add them to your breakfast pizza too. I love this with red onions too.

It’s pizza whether it’s for breakfast or not, you can put anything on a pizza. I might even try it with some hash browns or sausage on it one day. There is so many variations you could do with it.     • I have ate my fair share of dessert pizzas so thought why not breakfast??? A few alternatives next time I make it like adding onions maybe. But turned out great. Thank you.

    I also love breakfast for dinner– especially when my husband is out and its just me. I will cook complicated meals for the two of us, but when its just me, I just can’t get excited about it!

    • Oh yes it was by accident. My littlest, MM never can wait for me to get done taking photos of food before she has her little paws in the food. I think one piece I was trying to take a photo of on a plate and she bite it first. But sometimes they make better photos. lol Thank you.

    • Thanks babes, I will have to come over and bake it for you sometime although it’s so simple even Mads could do it. The kids love helping with this recipe as they get to crack the eggs in the little cheese wells. Try it. Enjoy.

  13. Hmm, I never considered a pizza for breakfast before, but it does look yummy, I have to admit, especially with a runny egg, that would be my choice. Will have to give this a go, though neither my hubby, nor Becky are big fans of pizzas (strange, right?), so I might just have to use myself and baby Alex as guinea pigs, though that’s no hardship – more for us! x #ShareWithMe

    • Oh no you should try it for the whole family there is no red pizza sauce or anything so it’s very creamy and cheesy. My daughter hates pizza but loves this. My mom loves it runny yolk on top but I like it a bit more cooked. Let me know if you do try it out and what you thought?

    • Oh this is one of my favorite recipes that I made and it came out so good. I really love how it can be for a weekend Sunday breakfast or eating breakfast for dinner. Either way it’s a firm favorite in the family now. (minus B due to allergies of course). Thanks Donna.
