I am not new to receiving food at my door but I was definitely new to receiving so much food all in one adorable Bearfaced Groceries box. I hadn’t heard of them before but I love finding companies that make my life easier. Groceries being delivered in our busy life is definitely a bonus. Even more, as I pulled all these delicious vegetables, fruit, cheese and meat from this box, I quickly recognized the quality, freshness, variety, and recipes starting swimming in my head. There is something about a pile of vegetables and fruit that really does motivate me to eat healthier. There were green apples and red apples, pears, oranges and bananas all great for  my morning smoothie. I envision some salmon and eggs for breakfast tomorrow or possibly with this delicious sausage.

It was a beautiful day, today, the warmer temperatures and lighter evenings have me really wanting to get healthy for summer ahead. We have been eating salads more and pairing it with half a sandwich or a cup of soup. I like to eat lighter when it’s warmer out but having so much choice I wasn’t sure what I wanted to make first. Smoothie, salad, stew, roasted dinner, casserole, soup; you name it, it was going around in my head. I am the ultimate foodie. I just can’t help wanting to make up a variety of recipes all at once. I settled on creating a nice light chicken soup with potatoes. While that sounds like heavy items in a soup, it wasn’t at all. I made it with a thin vegetable broth with herbs and some cubed steamed vegetables. I put all the ingredients in my Tefal Cook4Me and in 15 mins I had a delicious chicken soup made. I love how the chicken shreds and falls apart when it’s cooked in the Cook4Me. The kids loved this soup too. They don’t normally like to eat a lot of soups but I kept the spice out this time as I am known for cooking with spicy flavors and I think the thin broth was great for their little taste buds.

Along side my yummy cup of soup I made a large salad for us all to share. The kids usually end up stealing all the cucumbers, cheese and carrots off the top while we finish setting the table. We end up with what’s left of our lovely Spring salads, the leaves. To me, there are heavy salads that contain heavier filling ingredients like tuna or those spring and summer ones that are leafy and light with vegetables. Spring Salad & Chicken Soup

Ingredients

SOUP

  • 4 chicken breast
  • 3 large carrots
  • 3 potatoes
  • 1/2 onion
  • 1/2 green pepper
  • 4 cherry tomatoes
  • 600 ml vegetable stock
  • 1 tbsp mixed herbs
  • salt and pepper

SALAD

  • Leafy greens romaine, iceberg, and Pak Choi
  • 1 carrots
  • 1/2 cucumber
  • 2 slices mature cheddar diced
  • 4 mushrooms
  • 4 cherry tomatoes

Instructions

SOUP

  1. Dice all ingredients and add to slow cooker/cook4me/or in large pot
  2. Add vegetable broth
  3. Cook in slow cooker for 4 hours on high/cook4me for 15 mins or boil 20 mins in large pot
  4. Sprinkle salt, pepper and mixed herbs on top
  5. Serve with warm bread or spring salad

SALAD

  1. Mix ingredients together each dry or with your choice of dressing

Next up, I need to get my smoothies going again for the summer. I love to have an ice cold fruit and vegetable smoothie to get healthy for the summer months. It’s so much easier to drink when the sun is shining and you feel motivated. Lately, we have been eating a lot of salmon and scrambled egg which I never thought would taste so great together.
