On my mission to eating cleaner and healthier, I have also been trying to eat a wider variety of foods. I want my kids palette to have variety and too many times I have stuck to the same meal over and over. The same vegetables and the same fruit day in, day out. Sometimes we have cravings for the old meals too. So I thought I would give my taco salad a new spin and add some healthier options to it.
With all my cooking and baking my pots and pans get absolutely battered. I was ever so excited to hear my long time favorite brand Oxo has recently launched a new cookware range at Lakeland. I was desperately in need of a new frying pan. I was sent this 24cm frying pan to test out. I thought to myself it’s perfect for my taco salad recipe revamp.
There are so many great features to the Oxo Good Grips frying pan with it’s triple-layer non-stick coating
and innovative Magneto™ induction base. I love the super soft, non-slip handle and the fact that it is oven safe up to 200°C. For me, when cooking for Mr P it’s nice to be able to put my frying pan in the oven to keep warm until he is home for dinner. It keeps the food from drying out when I keep it on the pan and he doesn’t have to reheat it as it’s usually not long after we sat down that he comes trucking in. Most important for me all my cookware has to be dishwasher safe, I am too busy to worry about what I can and cannot put in the dishwasher with two toddlers running around.
Beef & Radish Summer Salad
Ingredients
- 500 g Mince beef cooked
- 1/2 onion diced
- 1 packet Taco Seasoning
- 5 red radishes
- 1 package fine trimmed green beans steamed
- 1/2 pack Spinach
- 1/2 pack Iceburg Lettuce
- Small can corn
- 1 can black beans
- 1 pack Fresh Gourmet Tortilla strips
- 1 Tbsp chai seeds
Instructions

Fry your mince beef up with your onion

Add taco seasoning to beef as directed on packet, let taco beef cool

Steam your green beans, let cool

Dice radishes, drain black beans and corn

Layer on four plates spinach, lettuce and rest of ingredients as desired
Recipe Notes
Add grated cheese or parmesan cheese to the top if desired
We love taco salad and loved the beef & radish alternative too. I love making random things out of the things we love so much. While radishes are new to our diet and black beans too we still have a huge soft spot for taco beef anything. We are a spicy eating family and the radishes add that extra kick to this salad too. I was surprised when my kids started liking hot spicy foods. I even go as fast as throwing on hot spicy salsa on top of my Beef & Radish salad to make it even hotter.

I never knew Oxo Good Grips made frying pans!. My frying pan’s usless everything sticks to it.
No they didn’t before this is a new launch of their cookware and it’s amazing.
This looks nice and something i could really use. I have trouble just frying an egg without it sticking in my pan.

that salad looks lovely – and it’s great to test and extend your kids palettes while they’re still young and adventurous with food. You see many kids that are stuck in a rut and only eat such and such, which must be a nightmare for any parent. #tastytuesdays
Yes that’s just it I don’t want my kids to be picky and not want to try new things and have a variety of food too.
Sounds delicious, you could always replace the meat with Quorn, turn it into a veggie meal rather than meat.

Yeah at first it was whatever is leftover in the fridge. They all taste great together though.
