Pie in a blender!!!

Yes, you heard that right. It’s the easiest, quickest and most delicious Strawberry Lemon Pie recipe you will ever try! One even the kids will want to throw together and bake with you.

I have so many memories as a child baking with my mother. And pie seems to be the one recipe, when I smell it, I’m instantly reminded of home. Does baking do that to you too?

This blender pie recipe won’t disappoint you either. It’s the zestiest strawberry lemon pie on the block. Full of enough sweetness to compliment each other perfectly.

We have been testing out the K400 KitchenAid Blender with this recipe. The K400 can blend all food types including those that are tough to get smooth like nuts, seeds, ginger, dense fruits, and fibrous vegetables. In this recipe, we had to blend all the ingredients together, including full lemon rinds! There were no bits left at all. Leaving us with the perfect strawberry lemon pie filling ever!

How to make Strawberry Lemon Pie!

You will need:

1 lemon

6 large strawberries

1/2 cup butter

1 1/2 cup sugar

4 eggs

1 tsp vanilla

One store bought pie crust (or make one yourself)

Powdered sugar to serve

How to make your blender pie filling:

Blend it all together! Lemon rinds and all. (Minus eggshells of course!) 

Pour into your store bought (or homemade) pie crust and bake at 350F/180 C degrees for 40-45 minutes!

Let your strawberry lemon pie cool on the counter. Then put it into the fridge so the middle thickens for about 1 hour.

Serve with a dusting of powdered sugar on top!

Please note: Your filling may puff up while cooking so don’t fill too high. As it cools on the counter this will go down again.

Alternatives:

You can add cherries or raspberries instead of strawberries. Or leave them out altogether to create a gorgeous blender lemon pie recipe too! The choice is yours!

Ingredients

  • 1 whole lemon
  • 6 large strawberries
  • 4 eggs
  • 1 1/2 cup sugar

  • 1 pie crust, store bought, pre-made
  • pinch powdered sugar for serving

Instructions

  1. Blend everything (yes, whole lemon) in a powerful blender, (we used a K400 Kitchenaid Blender)

Alternatives: Use blackberries, raspberries or blueberries instead of strawberries. Only needs a little handful. Or leave it out to make a classic blender lemon pie recipe!!!
