Pecan Caramel Frosting Bites

Do you like the frosting but not the cake?

Yup, me too. I am not a fan of cake but when it comes to frosting, I love it all. I am the one scraping off the frosting on the leftover cake and binning the cake after the kid’s parties. When I caught my Aunt and mother doing the same thing at a family gathering, I couldn’t help but think that I should make just the frosting as a treat without the cake! Hence Frosting Bites were born. At first I rolled them into little frosting balls but let’s be honest, brown rolled up balls don’t look as appetizing as flat, bark pieces to eat, do they?

Caramel Frosting Bites

Cook Time 5 minutes

Ingredients

  • 4 cups light brown sugar
  • 5 oz evaporated milk
  • 1/2 cup butter
  • 1/8 tsp salt
  • 1 cup chopped pecans
  • 1 tsp vanilla extract

Instructions

  1. Combine the sugar, milk, butter in a saucepan

  2. Cook over medium heat, continuously stirring until butter is melted and sugar is dissolved

  3. Bring to a hard boil for 2 mins

  4. Remove from heat and cool slightly

  5. Using electric mixer, beat frosting until no longer glossy

  6. Add pecans and vanilla and mix until frosting is a thick, spreading consistency

  7. On parchment paper, spread frosting thin using a spatula

  8. Place in the fridge for 2-5 minutes to harden and then cut with sharp knife into bite pieces.

All The Frosting Without The Cake

I love that I am not the only one in the family or in the world for that matter that just eats the frosting. It’s the best part. While I do have soft spot for cupcakes which most people think I am crazy that I don’t like cake but I love cupcakes. I think it’s all down to the frosting with every bite in a cupcake. Less cake, more frosting should be put on a shirt for me.

But for those cake lovers, this caramel frosting is great on cakes like coffee cake, vanilla sponge, and carrot cake. Or perhaps one up and put it on banana bread! Now there is a good idea. Might just have to try that myself.

Movie Night Snacks

While my friends love to grab a pecan caramel frosting bite when they join me for coffee, my family think they’re perfect for movie night snacks. Little frosting bark pieces, pumpkin brownies, cheesy bacon twists and ham and cucumber snack bites and we’re set up for the perfect family movie night!
