Forget the ice cream, yes, I said it. Put the Ben and Jerry’s tub in the trash. This has quickly become my favorite dessert to make for a tasty treat and it won’t add layered to your waistline. (Unless, of course, you consume large amounts everyday, trust me, it’s hard not too it’s that delicious). The grated coconut flavor with the crunch of pomegranate seeds is enough to fall in love with this recipe.
Coconut Greek Yoghurt With Pomegranate
I was looking for something that would get rid of my cravings for something sweet and indulging on the weekends. Being a huge fan of Greek Yogurt, I have often relied on it to take that edge off. Lately, I have been experimenting on things to top it with, like you would ice cream. I try to keep it a healthier treat so I steer clear of toppings like chocolate, caramel sauce and granola. After testing a few toppings out, I found one that really satisfies that urge for a special treat. I want to share with you my new favorite combination for this delicious dessert or snack.
Coconut Greek Yogurt with Pomegranate Seeds
Ingredients
- 1 cup Greek Yogurt
- 1 tsp chia seeds
- 1 tbsp grated coconut
- 1 tsp cinnamon
- 1 large scoop of Pomegranate seeds
- 1 tbsp of oats optional
Instructions

In a small bowl layer oats on the bottom (optional)

Pour Greek yogurt on top on oats (do not stir)

Top with chia seeds, coconut, cinnamon, and pomegranate seeds

Let set in fridge for 20 mins if using oats to soften them, if not, it’s ready to serve

I like this served cold in summer or served warm on cold winter nights.
Versatile Greek Yoghurt Toppings
The beautiful thing about this recipe is while I love it as a dessert. I can eat this for breakfast, a snack, as a light lunch with a smoothie or a dessert after dinner time. It’s very versatile and you can add flaxseed or cacao powder to it too for more energy boosting ingredients. If you don’t like pomegranate seeds throw on your favorite berries but keep it a small amount as they are still high in sugar. It’s really tasty to try a few combinations but at the moment, I am absolutely drooling over the crunch that the Pomegranate seeds provide and that tangy flavor with the Greek yogurt. The cinnamon and coconut flavors combine are a tasty treat too. Definitely reminds me of Autumn and cooler days ahead. I even enjoy this warmed up a little bit on those cold winter nights to comfort you further.
