The Dalgona coffee recipes have spiked during lockdown and over this summer online. It’s a new delicious coffee drink that will feel like you are drinking a dessert. Coffee shops have now started selling their variations of this cold, frothy coffee recipe too. So I thought I would make my own version the Dalgona coffee recipe with coconut milk and it’s one my friends ask for when they come over now.

It’s creamy, rich, frothy, and coconutty. It’s the drink that doesn’t take long to make and you can whip it up anywhere.
What you need:
2 Tbsp boiling water
2 Tbsp sugar (coconut sugar can be substituted but it takes twice as long to whip)
2 Tbsp instant coffee
Coconut Milk (use thick cream on top only)
*Don’t throw out the coconut water at the bottom of the can use it for breakfast smoothies. No waste!
How to make the best Dalgona Coffee with Coconut Milk:
Blend coffee, water, and sugar with hand mixer or mixing machine on medium until the consistency of whip cream.
Scoop the creamy off the top of the coconut can and leave the clear coconut liquid at the bottom.
Pour coconut cream over ice and top with coffee whip
Sprinkle a little sugar on top to serve.

Dalgona Coffee with Coconut Milk

Ingredients
- 2 tbsp instant coffee
- 2 tbsp boiling water
- 2 tbs- sugar
- 1 cup canned, coconut milk overnight in the fridge
Instructions

Use a mixer, whip coffee, sugar and water together.

Scoop the top cream off the coconut milk leaving the clear liquid behind (use for smoothies, no waste).

Pour coconut cream over ice and top with coffee whip.

Sprinkle sugar on top to serve.
