In a rush to make dinner for the whole family? During the week, it can get hectic for us to say the least after school activities, homework, sports, spanish, some nights dinner is a grab and go kind of night. I have been making easy recipes that the whole family will love on this here blog to share with other parents that might be as busy as we are during the week. This is the perfect spring/summer light bite meal to rely on too. The days are getting warmer and the kids get a hot meal every day at school so it’s nice to have something refreshing and healthy.
Family Taco Night
My kids love these because I put all the separate ingredients in various bowls so they can fill their own tacos as we eat. They are a great one to enjoy al fresco in the garden too. Roll on summer, I say. I get bored of cooking the same meals on rotate or fish the same way every time. I am always looking how to change and alter our favorite dishes to keep the kids palette challenges too.
Fish Tacos With Pineapple
The kids love pineapple and I think it pairs perfectly in a salsa style with white fish here. I truly think my kids would eat anything in a wrap if you add some grated cheddar cheese in it too. hahaha They like filling them and rolling them up too. When they were little they called tortillas food boats. I still wish they called them that just to keep that innocent youth a little longer.
Fish Tacos with Pineapple Salsa
a sweet and tangy light bite
Ingredients
- 175 g pineapple, diced
- 1 yellow pepper
- 100 g plum tomatoes, diced
- 1 tsp red chilli flakes
- 2 tbsp fresh coriander, chopped
- 1 tbsp lime or lemon juice
- 4 fillets fresh white fish
- 100 g sweet corn
- 8 mini tortillas corn or flour
- 65 g baby rocket salad
- 100 g natural yogurt
Instructions

In a bowl, mix together pineapple, pepper, tomatoes, coriander, lime or lemon juice and red chilli flakes.

In a grill pan, on medium heat, spray fish fillets with olive oil and cook fish until it’s golden on both sides, approximately 2 mins each side.

Grill tortillas until lightly golden and warm.

Place a tortilla on a plate, top with rocket and place pieces of fish on top.

Add the pineapple salsa mix you made in step one to the top and garnish with coriander leaves and lime or lemon wedges.

Serve with natural yogurt on the side to add last minute for a creamy taste.
A Social Meal
My favorite thing about this recipe is that it takes almost no effort to whip together and you can make it for as many people as you need. Having guest over for dinner this is a winner. What is more social than building tacos with various ingredients around a big table. I love social eating. I think it’s the main reason I fell in love with food styling. Serve it with a tasty cocktail to give it a party atmosphere. And how about some strawberry bread for dessert for the perfect summer treat.
These are best with a dollop of delicious and creamy natural yogurt on top! I like to spice it up with extra red chilli flakes too. Your mouth will thank me, I promise.
