My husband likes a healthy but hearty meal. It’s the way to his heart so when it comes to celebrations likes Father’s Day, I know that a home cooked meal is what he really wants. He is a little against the restaurants putting up prices and time frames on holidays so he would rather celebrate and spend it at home with his family. This gives me the opportunity to make some new recipes each year for him. He absolutely loves meaty recipes but he also loves brussel sprouts. I thought why not bake the two together with a few other favorite ingredients in a tray bake style dish.
Modify The Meatball & Brussel Sprout Traybake
The bacon adds a bit of flavor and more meat to this dish while the sweet potatoes give it a nice combination flavor. I loved this with served with warm bread and butter and balsamic vinegar over top. The roasted walnuts give it a nice surprise crunch. The beauty of a dish like this is you can add whatever you want. You can leave out the nuts if you’re not a fan, replace the sweet potato with butternut squash – whatever you like.
One Pan Traybakes Make An Easy Family Dinner
It’s super easy and quick to make as are all my family recipes I create. I am a very busy working momma so it’s only right that I create these other busy working parents can whip up and try without breaking the bank either. I made a little side dish for the kids with broccoli instead of brussel sprouts and they loved it as much as we did. It’s great to be able to just alter one or two things for the kids to enjoy a similar healthy and hearty meal with us.

Meatballs & Brussels Sprouts Casserole
the hearty but healthy option for Father’s Day dinner
Ingredients
- 250 g Brussel Sprouts, peeled
- 200 g Smoked Bacon Lardons
- 1 large Sweet Potato, peeled, cubed
- 12 mini Meatballs, pre-rolled
- 4 tbsp extra virgin olive oil
- 80 g walnut, pieces
Instructions

Preheat oven to 200 degrees C

Lightly boil both Brussel Sprouts, and (peeled, diced) Sweet Potatoes in same pot for about 5 minutes.

On a cookie sheet, place meatballs in the oven to bake for 5 minutes.

In large casserole dish, mix oil, lightly boiled sprouts, sweet potatoes and spread out evenly in the dish.

Place meatballs evenly apart and add bacon lardons on top.

Cover with foil and bake for 10 minutes.

Take out of oven, stir ingredients, add walnuts on top and salt and pepper if you like, keep uncovered and bake for a further 5-8 minutes.

Serve with warm butter and bread.

Why not try with a bit of balsamic vinegar on top too?
Cooking With Brussels Sprouts Leftovers
While we have had this as a Father’s Day meal it is a great recipe for using up leftover brussels sprouts in the holidays. If you’re using leftover sprouts for this recipe then skip the boiling step and add them straight to the dish. They will add lots of flavour alongside the meatballs for a lovely meal after Christmas.
