It’s that time of year, where people are popping in unannounced to say Happy Holidays or see the kids, so why not whip up something yummy for them to nibble on with their welcome coffee or tea? Can’t cook fancy, nor can I. Don’t have the time? Well I have the perfect recipe for you that takes 5 minutes from start to finish.
American Peppermint Chocolate Bites
Ingredients:
400 g Milk Chocolate Chips (can use white chocolate or dark chocolate too)
180g Sugar
4 tsp. American Peppermint Flavor (can use any flavor you want, orange is popular)
Melt the chocolate chips in a plastic measuring cup in the microwave for 60 seconds, then stir well. Do another 30 seconds and stir well. Continue in 30 second increments until all the chips are melted . In a separate small bowl, add peppermint flavor to the sugar and mix. Do not add flavor straight into the melted chocolate, it doesn’t mix well. Once chocolate is melted, pour sugar mix into the measuring cup and stir.
Pour immediately onto wax paper. Spread with a spatula until the chocolate is very thin. Immediately make criss-cross lines by using a butter knife, like below. You end up with diamond shapes bites. Alternatively, make straight lines to end up with squares instead.
Let the chocolate harden on the counter for a few minutes. Doesn’t take long if the room is cool. Then break up the chocolate bites and store them in an air tight container. So the next time you have a fly in visit from someone, you can serve a few of these next to their coffee.
This year I made these for Christmas presents. You can put them in a mason jar with a bow or in baggies and write a little message.
Ta-da, quick and easy. I keep a small stock of chocolate chips and various flavors in the cupboard for those unexpected moments when you are out of cookies or biscuits and need that something extra to pair with your coffee. Keep them on hand and always have a nice treat to make for your next guests.
