I love when the holiday season rolls around and the red Christmas cups come out at Starbucks. It signifies the start of the festive season and what better way to enjoy it than slurping down one of the infamous flavors that appears on their menus, for a limited time. My favorite is the Pumpkin Spice Latte.

What also comes with the festive season is busy lines and Christmas expenses, so this year I thought I would try to make it from scratch at home. If you have followed any of my other recipes you will know I am very fond of anything that can be made in the crockpot (slow-cooker). It makes it easy, fast, cheap, and little effort put in with a tasty outcome! That’s a win in my kitchen.

Slow Cooker Pumpkin Spice Latte Ingredients

  • 8 cups milk
  • 6 cups strongly brewed coffee
  • 1 cup sugar
  • 1 cup canned Libby’s Pumpkin
  • 2 Tbsp vanilla
  • 1 tsp. Pumpkin Pie Spice ** see below

Pumpkin Spice Latte Toppings

  • Whip cream
  • Cinnamon

How to Make Pumpkin Spice Lattes in the Crockpot (Slow Cooker):

Add all ingredients into your crockpot (slow-cooker) and put it on HIGH for 2 hrs. Pour immediately into a cup and add your choice of toppings. I use the empty milk carton to store it in the fridge after it cools. When I want a cup, I either heat in the microwave or I use my Nespresso milk frother, it gives it a foamy texture. Use within a few days for freshness.

How to Make Pumpkin Pie Spice:

If you don’t have Pumpkin Pie Spice, which I didn’t, I made my own. This recipe below, makes more than you need. It’s easy and you can use the extra for other recipes or I sprinkle the extra on my oatmeal in the morning – it’s delicious. 

  1. 4 teaspoons ground cinnamon.
  2. 2 teaspoons ground ginger.
  3. 1 teaspoon ground cloves.
  4. 1/2 teaspoon ground nutmeg.

Why Use A Slow Cooker?

Slow cookers have been making a come back in recent years, and it’s no surprise really. They are really economical to run, and you can safely leave it on when you’re out of the house. At this time of year it means you can come in cold at the end of the day and find your dinner ready to eat with minimal effort.

For this pumpkin spice latte I like to get it in the slow cooker before we head out. I don’t have to worry about leaving the hob on, just dump in the ingredients and then head out for a few hours with the family. Once we come home all chilled from playing outside or having a walk I can immediately warm up with the pumpkin latte straight from the slow cooker. Now all I need is a second crockpot so I can have the kids hot chocolate warming while we’re out too.
