It’s summer time but that doesn’t mean hearty meals need to be put aside for winter time. I love spaghetti all year round as much as the kids do. The combinations you can create with spaghetti are absolutely endless. Having said that when I added a few new ingredients to my old chicken spaghetti recipe it transformed it for me. I don’t think I will make this recipe with chicken ever again. This time, I used Butcher’s Choice Cumberland Pork Sausage that added so much more flavor and spice to it. The spice in the cream sauce really compliment each other. I love the added nutrients from the spinach.
It’s super easy to make, like all my recipes, and the kids absolutely love sausage in all their meals. We have been creating and cooking a lot more this summer. I love the added spice sausage adds to any meal and it’s also summer time and what is easier to bbq than sausage? This recipe could easily be made using the left over bbq sausage from the weekend bbq you just had. It’s also a great way to get the kids to eat spinach, garlic, onions and tomatoes chopped up within the sauce. They are too excited to eat the chunks of sausage and slurp those long skinny noodle to care what else I throw in it.
My husband is a cream sauce fan either but he loves this because once it’s mixed in the noodles it’s a gentle coat of sauce. The noodles are not soaked in a bowl of cream but just lightly glazed with it to add a nice flavor and cool that mouth down after a spicy bite.
I served it with crusted bread and butter. Even though it’s pasta and there isn’t anything light about pasta I don’t feel like it sits on my stomach as much as thicker cream sauces. This one really does feel more like a summer sausage pasta.
Sausage & Spinach Pasta
Ingredients
- 12 ounces spaghetti
- 12 ounces Butchers Choice Cumberland sausages casings removed
- 1/2 cup diced onion
- 2 large garlic cloves chopped
- 1 cup spinach
- 4 chopped Independent plum tomatoes
- 1/2 cup whipping cream
- 1/4 cup slivered fresh basil leaves
- Shaved or grated parmesan cheese
Instructions

Cook pasta according to package directions

In a large pot over medium heat, cook sausage, onion, and garlic

Stirring frequently, until sausage starts to brown

Add spinach and tomatoes and cook, cover, until spinach wilts

Stir in cream

Add cooked pasta to a shallow bowl and top with sausage & spinach sauce

Sprinkle parmesan cheese and basil on top to serve

Serve with warm crusty bread and butter
