Summer Berry Pavlova Recipe

You don’t need me to tell you it’s summer time. June is upon us and one of the things I love about summer besides the obvious is Summer Berry Pavlova. It’s one of my favorite desserts and if I am eating out at a restaurant I will always choose some form of meringue. This recipe is super easy, which I always promise all my recipes are easy and quick.

With the heat last week, it was the perfect afternoon treat! My mother in law was over and we all shared some of this delicious summer berry pavlova. The thing I love most about meringue is how light it is. I really didn’t feel like I had ate a huge piece like I would have done with big piece of cake.

Ingredients

For the meringue

  • 1 1/4 cup caster sugar
  • 6 egg whites
  • pinch salt

For the pavlova

  • 2 cups mixed strawberries raspberries, and blueberries
  • 1 cup double cream
  • 1 cup fat-free yogurt plain
  • 2 Tbsp caster sugar
  • 1 vanilla pod

For the sauce

  • 1/2 cup mixed berries
  • 1 Tbsp sugar

Instructions

  1. Preheat oven to 300 degrees F

For the meringue

  1. Put your egg whites in a large bowl and beat at medium speed until peaks form
  2. Gradually add sugar and a pinch of salt
  3. Beat on high for 6-8 minutes until it is silky, and smooth
  4. Line two cookie sheets with baking paper
  5. Evenly divide meringue into two circle blobs in the center of the cookie sheets
  6. Bake for 1 hour or until golden brown

For the pavlova

  1. Cut your strawberries in half and mix all your berries in a bowl
  2. Whip your cream with your sugar until smooth
  3. Add yogurt
  4. Fold vanilla seeds into your cream
  5. Place one baked meringue on the bottom, spread half the cream mixture on top
  6. Pile half your berries on top of your cream and add the other meringue
  7. Spread the leftover cream on top, and pile on those berries

For the sauce

  1. Blend berries and sugar together
  2. Pour on top to serve

Recipe Notes

The sauce isn't necessary but adds a lot of flavor. If you don't fancy making two layers, cut the recipe in half and only do one layer! Great for a summer time treat!

As you can see in the pictures, it’s super easy to do. Whip up your egg whites throw them in the oven and make your cream and and throw the berries on top. Fool proof! It’s harder to cut and serve without smashing the pretty layers as you can see, but I did my very best.

    • Yes sounds like he is in need of a homemade one. This would be great for him because it’s not crunchy chewy like the store bought its spongy like cake almost. Bet he would change his mind. Let me know. lol

    • This one is quick. Takes only a few minutes with a beater and it’s done. I have never spent long time on prep for this. And it’s always came out great. Try it. You will be surprised how easy and fast.

    • I have some bibs I am reviewing if you need to borrow them. hahaha Test them for me. lol It made me drool a bit too. I was good had one piece and gave the rest away. People love that I like to bake and then be healthy and get rid of it. lol Neighbors especailly, always getting things from me.

    • There seems to be a lot of drooling going on here. Love it. Guess my photos aren’t as bad as I thought. Or people are just starving themselves these days. hahaha No promise Tracey you could do it if I can. All my recipes are fast, easy and promise of no complications.

    • I am borderline obsessed with anything that has meringue in it. So delicious. Only had it the first time ever when i moved to england. Crazy I know.

  10. That looks delicious and I love meringue, but I don’t like cream.. boo.. I always miss out on desserts that look lovely… although if it possible to scrape the cream off I do that – not very classy in a restaurant though! You’re a talented lady!

    • Mel, that’s ok just make it without cream and make more of the sauce. You could make the meringue and then pour sauce and berries and layer the other one on top and have it with tea or coffee! it would still be lovely.

    • I know I actually had to make this, eat one slice and give the rest away as we are on a diet too. Sorry but it was yummy I had to keep looking at it so I shared on the blog instead. hahahaha oops will do a healthier rice chicken recipe next week to make up for it.

    • Not a genius use a plugin for everything there are so many recipe plugins to use and make pretty. I was sick of my ugly recipes before. They weren’t getting anyone looking at them. It’s really helped.

  15. Your Pavlova looks delicious! I could eat half of it right now (how greedy am I?). Same as you, whenever I eat out, I tend to choose something that has meringue in for dessert. I just love the sweetness! Mel

    • It’s my favorite too and I am on a strict diet now until my vacation to America. Or at least that’s what I keep telling myself then I make things like this. It’s so hard.

  19. I was salivating over this during my lunch hour at work on Wednesday Jenny! I love the fact that its a bit better (?) for you than a cake as its mostly air right? ๐Ÿ˜‰ (lets just forget about the cream – as long as there’s no carbs I’m there!!). Will have to try this – if its as easy as you say it is then its one of those show stopper’s that you surprise yourself with? X

    • Yes Sam definitely. If I can do it you can. I am no chef. It’s definitely healthier than cake or I tell myself that with the inches of cream. Lol
