Easter Snickerdoodle Cookies

Ingredients

  • 1/2 cup unsalted butter
  • 2/3 cup sugar
  • 1 small egg
  • 1 tsp vanilla
  • 1 1/2 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp cream of tartar
  • 1 1/4 tsp cinnamon
  • 1/4 tsp salt
  • Topping: 1/4 cup sugar & 1 tsp cinnamon
  • Frosting: One tub Betty Crocker Vanilla & green food coloring
  • One bag of easter mini eggs

Instructions

  1. Preheat 375 F degrees (190 C)
  2. Mix topping in a bowl and set aside
  3. Cream butter for one minute until smooth
  4. Add sugar, mix until fluffy
  5. Mix in egg and vanilla and set aside
  6. In small bowl, whisk flour, baking soda, cream tartar, cinnamon, salt
  7. Add dry ingredients in slowly to butter mixture
  8. Dough will be thick, roll into one inch balls
  9. Roll balls in topping to coat each ball
  10. Set on parchment paper on a cookie sheet
  11. Slightly flatten the balls to create a flat top
  12. Bake 10 minutes or until sides are lightly brown
  13. Let cool

Decorating

  1. Use a piping bag for the easter nest grass and drop two easter mini eggs on top
  2. Repeat until all cookies are decorated.
