Oatmeal Courgette (Zucchini) Cookies
a deliciously healthy addition to oatmeal cookies

grated zucchini

oats

chopped walnuts
Glaze

melted butter

powdered sugar

milk

vanilla extract

Preheat oven to 350 degrees F
Cookies

Mix flour, cinnamon, baking soda, baking powder and salt in a small bowl

In a large bowl, beat butter and sugars until smooth and fluffy
-
Beat in egg and vanilla
-
Beat flour mixture into butter mixture
-
Mix in courgette (zucchini), oats and nuts together
-
Must refrigerate for at least 1 hour

Scoop a large spoonful of dough onto parchment lined cookie sheets
-
Bake until edges are golden brown about 12-15 minutes

Let cool
Glaze

Melt butter in the microwave
-
Sift powdered sugar into a medium size bowl
-
Add the melted butter to the powdered sugar
-
Add milk and vanilla
-
Beat until smooth
-
Drizzle over cookies
You can add chocolate on top instead for a sweeter cookie or omit the glaze for a healthier option
